WHAT YOU'LL DO IN THIS ROLE wine/beverage management

  • Understand financial opportunities by surveying wine and beverage demand.
  • Consult with key individuals in the local community to assess opportunities while identifiying and analyzing competitors.
  • Control purchases and inventory, negotiate prices and contracts, develop preferred supplier lists, review and evaluate usage reports and take corrective action as necessary.
  • Apply sound revenue management strategies to secure the right level of business at the most optimal time to yield maximum revenues.

GUEST outreach

  • Collaborate with Director of Marketing by assisting with marketing, advertising, public and community relations programs, evaluating program results and identifying and tracking changing demands.
  • Serve as the primary point of contact for any wine or beverage related events.
  • Participate in local networking activities that often take place off-property.

GUEST EXPERIENCES

  • Create long-term professional relationships with guest clientele.
  • Empower employees to provide unrivaled guest service.
  • Interact with guests to obtain feedback on product quality and service levels and respond effectively to guest challenges and complaints.
  • Incorporate guest satisfaction at every opportunity with a focus on continuous improvement.

OPERATIONS

  • Manage the wine and beverage program in compliance with all local, state and Federal beverage and liquor laws.
  • Comprehend budgets, operating statements, and assist with payroll progress reports as needed to assist in the financial management of department.
  • Activate specific brand strategies geared towards enhancing guest experience.
  • Sustain and enhance all wine and beverage menus and guest touch points.
  • Understand beverage control including, but not limited to: days on hand, perpetual inventory, bar pars, portion control, costs controls, beverage potentials, mix of sales analysis for beverage, issue & returns, and period end inventory.
  • Monitor to ensure the ambiance/atmosphere (e.g., lighting, music, table-top, etc.) is appropriate for outlet concept, positioning, time of day, etc.
  • Lead compliance and employee adherence in handling and cleanliness standards and certifications.
  • Stand, sit, or walk for an extended period of time or for an entire work shift.
  • Move, lift, carry, push, pull, and place objects weighing less than or equal to 50 pounds without assistance.
  • Issue, open, and serve wine/champagne bottles. Answer guest questions or concerns regarding the origin, vintage, and style of various wines.
  • Update and maintain wine list and MICROS system.
  • Pair and suggest wines that will best complement menu items.
  • Attend wine tastings and develop relationships with vendors.
  • Request new wines and products.
  • Create and update wine lists.
  • Design and implement wine promotions and incentive programs.
  • Monitor and replenish inventory of wine cellar, equipment, and glassware.
  • Train and educate server and bartender staff. Conduct staff wine tastings.
  • Conduct vintage and BIN number checks.
  • Secure liquors, beers, wines, coolers, cabinets, and storage areas.
  • Follow all provincial and local laws for serving alcohol responsibly.
  • Maintain accurate spill sheet.
  • Ensure a high-engagement team and collaborative, collegial culture by supporting an open door environment.
  • Guide the growth and development of your team to support both business objectives and personal career progression of those you manage.

TALENT MANAGEMENT

  • Ensure expectations are met by exemplifying and encouraging behaviors that are consistently aligned with Marriott's standards.
  • Participate in the hiring process to identify the right talent to support the outlet's concept.
  • Facilitate the fair and equal treatment of employees.

YOUR EXPERIENCE

  • High school diploma or GED; 4 years experience in the food and beverage, culinary, or related professional area.

OR

  • 2-year degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or related major; 2 years experience in the food and beverage, culinary, or related professional area.
  • Smart Serve Certification.
  • Minimum WSET Level 3 and/or accredited Sommelier Certification.
  • Schedule as per business needs including afternoons, late nights, weekends, and holidays.

The salary range for this position is $87,000 to $113,000 annually.
